Today the Mount Edgecombe Hotel has been reborn as The Drawing Room, a refined daytime restaurant and function space brought to life by its new owners, Hayley and Jesse Gollan. With their vision and dedication, the couple have transformed the venue into a haven of modern luxury boasting high ceilings, contemporary decor and a curated menu that combines seasonal ingredients with artistic flair.
